The driving force behind the updated refurbished Three Cranes is our award-winning chef, James Dickson.

James grew up and went to school in Northamptonshire so he is, very much, the local lad. From school, he went to renowned catering college in Southampton then to sea on the illustrious QE2 where he honed his skills. A spell at one of one of the worlds greatest hotels, The Savoy in London's Strand, followed then back to sea on the luxury yacht Sea Goddess 2.
Finally back on dry land, he was at the world famous Champneys Health Resort, Head Chef at the Millstream Hotel at Bosham and most recently, Executive Head Chef at the 4 Red star 2 Rosette Bedford Lodge Hotel & Spa in Newmarket Suffolk.
But James' ambition was to be master of his own destiny, to have his own restaurant so, with his life partner Danielle now his business partner too, he has bought The Three Cranes.

Its not too much to say that James is something of an alchemist once he's in his kitchen; he has that magic touch that can turn ingredients into dishes that electrify the palette.
He has several notable achievements under his belt; he has won 2 Gold Metals and 1 Silver Medal in international cooking competitions, plus "Junior Chef of the Year 1989". 

During his years in the industry James has contributed articles and columns in prominent lifestyle glossy magazines, local media and high profile specialist foodie publications. A member of the "Craft Guild of Chefs" since 2003, James became a professional member of the Chaine des Rotisseurs" in 2008. His most recent triumph was being voted "Best Chef" in the prestigious Velvet Magazine.

Danielle is "The Business" half of the partnership.

Danielle grew up in Hertfordshire and Cambridgeshire, going to college in Cambridge before starting her career in banking and finance.
After 18 years as financial genius in a family owned business, she went to the Bedford Lodge Hotel & Spa as financial controller, where she met and formed a partnership with James.
